It’s a beautiful Earth Day here in central California. I hope you are capturing a bit of beauty today too.

I am really appreciating my main meal today, made, of course, with some boiled eggs, a sure sign that it is after Easter.

What’s In My Bowl: The Egg Trick

Eggs are a great little tool for meal-building because they are a fairly mild flavor and also fairly mindful in calories. They have some fat but not a whole lot.

I often combine them with an item that’s a little more extravagant, like bacon, ham, or sausage. Bacon and sausage have great flavor but the cured meats are lower on that health ladder (and they do have a lot of fat, making the dish a bit less calorie-minded).

Some people forego the bacon altogether and, frankly, that may not be a bad idea. But when I eat bacon, I combine it with something else like egg to add a bit more protein.
