That salad up there?

It has A LOT of haters!

Iceberg lettuce haters, that is!

Under the toppings is a wedge salad. A whole head of iceberg lettuce is under there and it was DELICIOUS.

Iceberg is criticized for being low in nutrients, but that whole salad made up for it in fresh oregano (which is very high in nutrients).

Iceberg also just simply has more water than other lettuces. The water makes it more crunchy, which I love. I also happen to be upping my hydration and so, heck, maybe I need to buy another head of iceberg. :)

The salad also reminds me of midwest cafes and, frankly, I am ready to get out and explore the world, so I just imagined myself on a great ole road trip as I ate that salad earlier.

The harsh truth is that I am MONTHS away from road-tripping due to my head injury recovery, and that is sometimes the exact time when a little dreaming is important.

In any case, that controversial iceberg lettuce made for a great meal today.

Also controversial: Should we be using bottled salad dressings?

You know I make my own and can whip them up in less than two minutes, but I used a bottled dressing today.

Would you want to know what I look for in these bottled dressings?

Some are great and others are just real bad ideas, in my opinion.
